During the nine-day festival, Canadian guest chef Derek Furlani will present various signature dishes prepared with ingredients imported from Canada, including pan seared Canadian clearwater scallops, maple marinated fresh Atlantic salmon, traditional roast prime rib and warm apple pie with Cheddar cheese or ice cream. A robust selection of wines will also be served, including Canada’s world-famous "ice wine", which is made from grapes that are frozen while still on the vine.
